After actively seeking and interviewing several independent caterers and catering companies in the DFW area, we chose Chef Pete catering service to be the caterer of choice for our wedding reception. We were immediately attracted to their gracious, sincere professional personalities. Chef Pete and his wife, and team member, Melinda make you their priority when you speak with them. They consistently create opportunities for you to express your ideas and desires. He will translate that information into an exquisite expression of flavor, aroma and presentation. Everyone at our reception commented to us on how well executed the food presentation was as well as how well the food tasted. Many times, food can look good, but not taste great. Chef Pete provides the best of both, taste and exhibition. He uses his knowledge of culinary cuisine learned from many places like his momma's kitchen; to Sambuca restaurant; to the State Fair - to create a masterpiece just for you. While his team member, Melinda, will strive to prepare a catering package that is not only catered to your food requests but your monetary requests as well. I am not quite sure where to begin. The ice sculpture, the tuna, the lamb, the lit sorbet goblets, the filet & shrimp, the desserts...the list goes on. Everything was phenomenal.

When we first talked with you regarding our backyard wedding both Shannon and I were a bit leery weather or not catering a cocktail reception and sit down dinner would be possible for 170 guests. However that quickly changed after our first meeting and all of our concerns were immediately put to rest.

Since the wedding we have heard nothing but rave reviews from our family and friends that attended. Not only was the food exceptional but so was the staff. Victor and his crew were as professional and accommodating as any staff Shannon and I have experienced at any 5 star restaurants. A special thanks goes out to everyone in both the front and back of the house.

I have to say one experience stands out the most. After going back and forth on things we wanted to change in order to accommodate our budget we seemed to hit a wall where instead of decreasing cost it kept increasing. It was at that point I called you (Melinda) and expressed our concerns. Instead of giving me a plethora of reasons that justified this increase you simply said, "Pete and I have been here before and we understand your situation." In addition to tweaking things on your end in order to make the numbers work with our budget, you went way beyond and gave us our ice sculpture as wedding gift. How rare is that? Unbelievable!

I am sure at some point in the near future Shannon and I will consider having a dinner party at our house and there is no question as to who will cater it—Chef Pete! Thank you for making our special day so memorable.

We just want to tell you what a great job you and your staff did in making our daughter's wedding such a huge success. The food was fabulous, presented beautifully, and served with elegance.

Your staff was very friendly and attentive in taking care of our guests. We have had many compliments on the service and the food. Our friends and family were overwhelmed with the afternoon.

My husband and I had the pleasure of using Chef Pete Catering for our wedding reception in May, 2007. Of all the staff and services that we arranged, Chef Pete's stood out, demonstrating class-act quality, dependability, and professionalism from the first day to the big day.

At our first meeting with Pete and Melinda Nolasco, they came to our home for a consultation. My husband, Mark, and I were impressed with the level of organization and expertise the pair exhibited. Not only did they ask pertinent questions about our event, but they also expressed keen interest in our specific food desires. We wanted "off-the-menu", out of the ordinary foods, and they happily obliged, adding their own suggestions as we brainstormed together. Chef Pete quickly ascertained the scope and limitations of our catering needs, being careful not to overlook practical considerations such as food allergies and budget. Here was a pair that really had it together and also cared enough about us and our relatively small event to get creative in meeting our needs.

It wasn't until weeks later that we sat down to a tasting in Chef Pete's kitchen and discovered the extraordinary quality of the food Pete was capable of preparing. Pete and Melinda were very responsive to our comments throughout the dinner, so that we felt free to offer criticism in how we would like the dishes tweaked to our tastes. After one more tasting, we were sold.

At the reception, Chef Pete's staff could not have been better. We received several compliments from our wedding guests about Pete's excellent staff. Our guests were delighted at the courtesy and professionalism the staff showed, with their sharp attires, pleasant words, and perfect decorum. Pete and Melinda, having abundant wedding experience, were also cognizant of the fact that the bride and groom are often the last to eat because they are tied up in conversation with guests. Pete and his staff made sure that Mark and I were the first to eat. They brought us plates directly, so that we would not have to stand in the buffet line or worry about missing out on the passed hors d'ouvres. The food that Pete had prepared was both plentiful and flavorful. On top of that, Pete and Melinda carefully wrapped up the leftovers for us to take home, as we had requested. We were enjoying their food for days after our wedding!

Our experience with Chef Pete Catering was outstanding. I would recommend their services to anyone who values quality food, dependable service, an awareness of budget limitations, and that special personal touch that lets you know your event, however big or small, is seen as important.
